On the three non-volcanoes regions, Huhuetenango is the highest and driest under cultivation. Thanks to the dry, hot winds that blow into the mountains from Mexico's Tehuantepec plain, the region is protected from frost, allowing Highland

 

Huehuetenango to be cultivated up to 6,500 feet (2,000 meters). Huehuetenango's extreme remoteness requires that virtually all producers process their own coffee. Fortunately, the region has an almost infinite number or rivers and streams, so a mill can be located almost anywhere.

 

Roasting Type: Medium-Dark - Rich, darker color with some oil on the surface. Bittersweet aftertaste. Flavor and aroma emerge and acidity disappears completely.

 

Yield: 12 oz bag of whole beans or ground coffee gives 62 cups of 9 oz approximately.
